This side dish is very healthy and low in calories. It was my mom's recipe and we often eat it with fried fish or meat, and sometimes, even with stew. Recently, we tried Vietnamese deli sandwich and found out that what makes it so yummy was this salad too! Don't be afraid to use radish, it's not a bitter or weird-tasting root crop. It has a distinct taste of it's own but I tell you, it's very pleasant, fresh, and yum in this recipe.
Ingredients:
1 big radish (about 0.5-1.0 lb), cut lengthwise, then slice thinly
1 tsp salt for radish
1/2 cup carrot strips
1 medium sized tomato, sliced thinly
1/2 red onion, chopped
1/2 cup white vinegar
1/2 cup sugar
1/4 cup water
1 tsp mustard seed (optiona)
1 tsp celery seed (optional)
dash of salt and ground pepper
Procedure:
1. Squeeze radish with salt, then wash with tap water.
2. Mix washed radish, carrots, tomato, and onion.
3. In a pan, mix vinegar, sugar, water, mustard seed, celery seed, salt, and pepper. Bring to a boil until sugar is dissolved.
4. Pour into the radish mixture.
5. Chill and enjoy!
